BLACK TRUFFLE PIZZA WITH FONTINA CHEESE

INGREDIENTS

  • 85 g Pizza dough

  • For The Truffle Sauce

  • 2 cans Truffle peelings

  • 150 ml White truffle oil

  • 1 g Freshly ground salt and pepper, of each to taste

  • For The Dressing:

  • 400 g Truffle juice

  • 400 g Fresh lemon juice

  • 400 g Soy sauce

  • 1200 g extra virgin olive oil

  • 10 g Black pepper

METHOD

  1. For Truffle Sauce

  2. Combine 2 cans of truffle peelings with 150ml White Truffle Oil in food processor and process until finely ground.

  3. Season with salt and freshly ground pepper.

  4.  For the dressing

  5. Combine all ingredients and mix well, set aside.

  6. To Serve

  7. Roll out one portion of dough.

  8. Place truffle sauce on dough; sprinkle fontina cheese on top and bake in a hot oven until well crisped and blisters are a bit burned.

  9. Cut into quarters and top center of pizza with a small amount of frisee lettuce dressed with House dressing and chives.
